8 oz. vermicelli (bean thread) noodles
6 dried shitake mushrooms
1 T. olive oil
3 cloves garlic, minced
1 onion, diced
1 small piece of ginger
½ cup carrots, cut julienne style
¼ cup celery, cut julienne style
2 cups shredded cooked chicken
2 T. patis fish sauce or salt
pepper
8 cups chicken broth (homemade or store bought)
chopped green onions

Romaine lettuce - cut in long strips

Directions:
Directions:
Soak the bean thread noodles in warm water for 15 min. Cut with a
scissor if desired.
Soak shitake mushrooms in hot water for 20 minutes. Squeeze out
excess water. Discard stems and thinly slice.
Heat a pot over medium heat. Add oil and saute onion and garlic.
Add mushrooms, carrots, celery and chicken. saute another 2-3 minutes.
Add fish sauce, pepper and broth. Bring to a boil.
Add the noodles and cook another 3-5 minutes.

Transfer to a soup bowl and garnish with green onions.

(Grandpa Nemesio would top pot of soup with whole pieces of
romaine lettuce while the soup was cooking.....)
