Flour tortillas
Enchilada sauce
Mexican or cheddar cheese
Directions:

Dip tortillas in hot grease for a minute to brown, crisp up slightly.
Put small amount of enchilada sauce on tortillas, enough to cover but not thick. Sprinkle plenty of cheese over and bake until cheese starts to brown and melt.
