3 large potatoes
3 cups leeks, cleaned, chopped
1 stalk celery, diced
1 large carrot, diced
4 Tbsp. butter
¾ tsp. salt
½ cup chicken stock
3 cups milk
optional - thyme or parsley for garnish
fresh ground black pepper

Directions:
Directions:
In a saucepan, place potatoes that have been cut into 1 in. cubes, leeks, celery, carrots & butter. Sprinkle with salt . Cook for about 5 minutes, until all veggies are coated. Add stock, bring to a boil, cover, reduce to simmer. Cook until potatoes are tender. You may have to add more liquid - so check occasionally. When the potatoes are tender, take out and puree with a potato masher; add milk to your desired consistency. Return to saucepan add pepper and garnish.
