4 cups white long grain rice
4 cups water
3 ½ cups chicken broth
1 8 oz. can tomato sauce
Sofrito (diced onion, green pepper,
pimiento stuffed green olives, 3 cloves
garlic).
1 large can gandules (pigeon peas)
2 packets Sazon
Adobo seasoning
oregano
cilantro

Directions:
Directions:
Saute the sofrito in a large pot with olive oil.
After a few minutes, add the tomato sauce.
Add seasonings and then the beans.
Add the rice and liquids - bring to a slight boil.
Do not boil continuously or it will burn.
After a few minutes lower the heat slightly
and let it continue to cook.
Lower heat again and let water evaporate.
Once water is almost completely evaporated,
cover tightly for 20 minutes. DO NOT
REMOVE COVER and leave on low simmer.

Remove from heat, let sit for a few minutes.

Test the rice and if any bits are crunchy,
place in oven at 350º for 15 minutes.
