4-5 lbs. of chicken thighs (with or without skin)
½ cup white vinegar
½ cup soy sauce
6 cloves garlic, crushed
1 onion, quartered and sliced
Lots of black pepper
4 bay leaves
1 packet of Mama Sita's Adobo seasoning
(with splash of water)

Directions:
Directions:
Combine the chicken, vinegar, soy sauce, garlic,
pepper and bay leaves in a large pot. Cover and
marinate for 1-3 hours.

Bring the chicken to a boil. Lower the heat and simmer
for 30 minutes. Remove lid and simmer until sauce
thickens and chicken is tender - about 20 more minutes.
Serve over steamed rice.

Increase ingredients as needed.
You may also substitute chicken for pork.
If there is no time to marinade:
Adobo can also be made by browning chicken first,
then adding the liquids and seasoning and cooking
covered for about 35-40 minutes.
