3 cups broccoli florets
2 cups Yukon potatoes, cut small
1 large sweet potato, cut small
1 small red onion, sliced thin
1 T. olive oil
salt, pepper
6 eggs
½ cup shredded Manchego cheese

(Optional: add some pico de gallo or
salsa for a kick of flavor).

Directions:
Directions:
Preheat oven to 425º F.
Coat a 2 quart baking dish with cooking spray.
In a large bowl, combine broccoli, potatoes,
onion, salt and oil - toss to coat.
Spread veggies in the baking dish and roast
for 10 minutes. Stir veggies and roast 5 min.
more. Remove from oven, let sit for 30 min.

Lower oven to 375º F.
Bake uncovered for 5 min. Remove from oven
and make 6 openings for the eggs.
Bake for 5 min. Sprinkle with cheese. Bake
5-10 min more until eggs are set.
Sprinkle with pepper.
