3 cups cake flour(very important, do not substitute )
2 cups white sugar
2 tsp baking soda
1 tsp salt
2 cups plain soy milk (again do not substitute, soy helps with the binding due to protein fat ratio)
1 cup light olive oil (makes it more yellow and helps with texture.no substitutes)
1/4 cup white vinegar
2 tbsp pure vanilla extract.

Frosting
1/2 of a bag of vegan chocolate chips
1/2 cup vegan margarine
4 cups powdered sugar
1 tbsp vanilla extract
6 tbsp coconut milk (add more a tbsp at a time if you want it creamier)

Preheat oven to 350 and grease to 9 inch round cake pans ,line the bottoms with parchment paper.Whisk the dry ingredients in a large bowl than set aside. In a another bowl whisk the wet ingredients.Pour the wet into the dry and mix by hand just till combined (do not over mix).Bake for 20 to 25 min or until top springs back to the touch and toothpick inserted in center comes out with a few crumbs.Types of oven vary greatly ,so check the cake at the 20 min mark than watch closely .I have a electric convection oven and it took 22 min. For me the top springing back to the touch works the best. Let cool completely on wire racks before frosting.For the frosting .In a double boiler fill the bottom pan with a little water .Note you can use 2 pans for this as well ,the smaller pan fits on top of a bigger pan with water on the bottom.Make sure to hold the smaller pan so the water does not get into the chocolate mixture.On low heat melt the chocolate chips with the vegan margarine.Once melted add the vanilla extract and remove from heat.Combine the powdered sugar and coconut milk in stand mixture,Add the melted chocolate mixture and mix until well combined ,Add about a tbsp of more coconut milk at a time if you want the frosting more creamy.
