10 cups chicken broth
¾ cup of uncooked rice
2 T. cornstarch
¼ cup lemon juice
3 large egg yolks
2-3 cups cooked chicken
salt and pepper to taste

Directions:
Directions:
Bring broth to a boil.
Stir in the rice.
Cover and boil slowly for 20 min.
In a bowl, stir in the cornstarch into
the lemon juice until smooth then
stir that mixture into the boiling broth.

Reduce heat and simmer for 5 min.

In a small bowl, beat the egg yolks lightly -
then rapidly whisk the mixture into the broth.
Stir in the chicken - when broth returns to a
simmer adjust seasoning - adding more
lemon if necessary.
