Ingredients: ½ cup (1 stick) unsalted butter, softened 1½ cups sugar, divided 2 eggs 1 tsp soda 1 cup buttermilk 2 cups sifted all-purpose flour ½ tsp (scant) salt 1 cup raisins or dates, chopped (prefer dates) Zest and juice of 1 orange ¾ cup quince jelly ½ pound turkey breast, thinly sliced

Directions:Preheat oven to 400º. Grease 30 mini-muffin tins. With mixer, cream together butter and 1 cup sugar until smooth. Add eggs and beat until well blended. Stir soda into the buttermilk. Sift together flour and salt, and then add to creamed mixture alternately with buttermilk. stir until well mixed. In food processor, grind together raisins (or dates) and orange zest (only the orange part, not the white pith), and add to the batter. spoon batter into muffin tins, filling a little over one-half full. Bake 12 minutes or until golden brown and firm to the touch. Place muffin tins on a rack to cook.
Brush tops of muffins while still warm with orange juice and sprinkle with the remaining 1/2 cup of sugar. After 5 minutes, turn muffins out of pan. Let cool completely before cutting each muffin in half with a serrated knife. Spread inside of muffin with quince jelly. fill, sandwich fashion, with turkey cut into pieces to fit muffins.
Note: Raisins instead of dates make for a less sweet muffin. Also, the orange could be juiced and the zest chopped a day ahead and refrigerated. I make the muffins ahead and freeze. I buy the smoked turkey at the deli. |
