2 c. flour
2 c. sugar
2 tsp. cinnamon
2 tsp. soda
1 tsp. salt
1 1/2 c. vegetable oil
4 whole eggs
3 c. grated carrots

Mix dry ingredients, add oil and stir, add eggs, one at a time, mixing well. Add carrots and stir well until mixed.
Bake at 350º about 35 minutes (I bake at least an hour) Do the toothpick test in the center. Clean but not overbaked.

Cream Cheese Icing
1 8 oz. pkg. cream cheese
1/2 stick margarine
1 box 10x sugar
1 tsp. vanilla
2 tbsp. milk (if necessary)
