1 lb lean ground beef
1 medium onion, chopped
15.5 oz kidney beans
1 regular can mild chili beans (I used Bushes chili beans – kidney beans)
14.5 oz petite diced tomatoes
69 oz tomato juice
1 packet McCormick mild chili seasoning (any brand would probably be ok)
1 c elbow macaroni, uncooked
Salt and black pepper to taste
a little water as it cooks

Brown ground beef and chopped onions. Drain. Add, kidney beans, chili beans, tomatoes, tomato juice, mild chili seasoning packet and salt and pepper to taste. Simmer for 1 hour. Add 1 cup uncooked elbow macaroni, stir and simmer 15 minutes.

If chili is too thick for you, you can add a little more tomato juice or water to make it thinner.
You can add a little chili powder in addition to the seasoning packet if you want a stronger chili taste.
Spaghetti broken up can be used instead of macaroni if you want. Mom just used what she had on hand.

Dad could not have anything spicey due to his stomach ulcers so Mom always made a mild chili!

Grandma's Chili was the one and only recipe Lora had asked for to be placed in the cookbook, so I asked Aunt Verla to try recreate Grandma's Chili to the best of her ability. Grandma rarely wrote anything down and if she did, you cherished it. She never did write down her chili recipe, but Verla has worked her magic in the kitchen and this is what she came up with.
