4 quarts cucumbers set 1 hour in salt water 1/4/ cut
6 white onions, thinly sliced
1 red pepper
1 green pepper
1/3 cup coarse salt
3 cloves garlic
3 cups cider vinegar
5 cups sugar
½ teaspoon turmeric
One and 1⁄2 teaspoon celery seed
2 tablespoons mustard seeds

Combine sliced cucumbers, salt and ice in a large bowl. Mix well.cover and chill 1 1/2 hours
Put a weight on and allow to stand 3 hours. (For a weight, I use a plate with a gallon bottle of vinegar or water on top of it).


Drain; rinse cucumbers under cold water. Drain; return cucumbers to bowl. Add onion to bowl. bring to a simmer over medium heat, stirring until sugar dissolves. Pour hot vinegar mixture over cucumber mixture; let stand at room temperature 1 hour. Let cool cover and use withing two weeks.

Mom did not have directions. This is what I remember from helping her make Bread and Butter Pickles.

Supposedly they got their name because during the Great Depression, they were a cheap staple in households. So people used them in sandwiches of bread and butter because that's all they could afford.
