Directions:In a large bowl add salt to the flour and mix well. Add ghee or clarified butter and mix until the flour is crumbly like breadcrumbs.. Next add 1 cup of water to bind the dough. Slowly add ½ to 1 cup of water until you form a soft dough. Transfer the dough mixture to floured surface and knead the dough well. You may or may not need all the water. In a bowl, let the dough rest for about 30 minutes.
On medium high heat add ground beef, garlic, ginger, lemon juice, salt, green chillies and half of the chopped cilantro in non stick saucepan. Cook until all the liquid has evaporated and the mixture is dry stirring constantly to avoid sticking to the bottom of the pan.. Taste for the salt and spiciness. If you need more you could add a little bit of salt or green chillies depending on your personal taste. Take the saucepan off the heat and let it cool. When the ground beef mixture has cooled down, add the chopped onions, sprinkle cilantro and garam masala. Mix the beaten eggs in the mixture.
Divide the dough mixture into equal portions and roll out the rotis. Add 2 tbsp. of the beef mixture to the rotis and cover with another roti. Seal the ends using a fork . There are several ways of making the rotis, you could use two per kheema mani or one roti depending on your preference. I have used one according to the picture and folded the sides. Use a fork to pierce the top of the rotis to release the air.
Using a little oil in a frying pan, fry both sides of the kheema mani until golden brown.
Enjoy the kheema mani with tamarind chutney and salad.. |
