For Noodles
2 eggs
2 teaspoons salt
2 tablespoons milk
1 1/2- 2 cup flour

1 chicken (3 to 4 pounds), cut up Substitute beef. Mom would use left over beef from a roast.
3 cups water
1 medium onion, chopped
1 teaspoon chicken bouillon granules. use beef bullion for Beef and Noodles

Directions:
Place the first nine ingredients in a large soup pot; slowly bring to a boil. Reduce heat; skim foam. Cover and simmer for 1 hour or until chicken is tender.

For Noodles
Beat eggs with a fork until fluffy. Mix eggs, milk and salt together until smooth. Stir in one cup of flour until smooth. Add additional flour, just a small spoonful at a time, until the dough comes together in a ball, but is still slightly sticky.

Dump dough out onto a floured surface. Use well floured hands to knead the dough with your hands, until it's no longer sticky, about 3-5 minutes.

Roll out onto a lightly floured counter until it's very thin -- less than 1/4'' thick or paper thin.

Use a sharp knife or pizza cutting wheel to cut the noodles into long strips, however narrow or wide you like. Roughly gather them with fingers into a pile to make them more shapely, and not so flat.

Add to pot with chicken/beef slowly; cook for 2-5 minutes or until tender.


Remember Mom cooked the noodles immediately and did not let them dry.
