Cook Beef in pressure cooker
2 lb. eye of round roast or chuck eye roast cut up in small bite size pieces
2 tbsp. yogurt
1 tbsp. ginger
1 tbsp. garlic
½ tbsp. green chili paste
2 tbsp. of lemon juice
1 tsp. salt
½ bunch of cilantro - chopped
3 tomatoes chopped
5 - 6 strands of saffron
2 cups of water

Step 2
Kalio -
5 medium potatoes skinned and cut up in half
2 tbsp. tomato paste
3 onions - cut up into very small pieces
1 tbsp. lemon juice
1 tbsp. chopped garlic
1 tbsp. chopped ginger
pinch of salt
1 tsp. turmeric
1 tsp. cumin and coriander powder
2 cinnamon sticks
4 cloves
4 cardamom pods
1 tsp. garam masala
¼ cup oil to fry onions
½ bunch of cilantro

Step 1
1. The first step is to cook the beef in a pressure cooker. The pressure cooker will hasten the process of cooking the beef. Depending upon your pressure cooker the time for cooking the meat will vary. Combine all the ingredients in Step 1 to cook the meat. In a pressure cooker cook for 25 minutes.
If you are not using a pressure you can cook on the stove for approximately 1½ hours or until the meat is tender. You may need to add a cup of water.
The meat should be tender

Step 2
1. In another saucepan, on medium heat add oil. When the oil is hot add cinnamon sticks, cardamom and cloves.
2. Add onions and fry until the onions are golden brown. Add chopped garlic and ginger.
3.Add the tomato paste, lemon juice, turmeric, cumin and coriander powder and cook for about 5 minutes stirring frequently to avoid burning. Add beef stock from the cooked beef and mix.
4. Next add the potatoes and cook for about 2 minutes.
5. Taste the mixture if it needs more salt and chilies. If it does add a pinch of salt and ¼ tsp.. of green chili paste or adjust according to your taste.
6. Add the cooked beef and turn the heat to low.. Depending upon how you like the consistency of .the sauce add ½ cup of water and let it simmer.
7. Sprinkle garam masala anatd chopped cilantro and let the beef curry simmer on low heat for 15 minutes. You can do a taste test again to see if there is enough salt and chilies.
8. Once you see the oil on the top and the potatoes are cooked, the kalio is ready to serve.



Serve with rice, paratha, chapatis.or rice
