2 tablespoons vegetable oil or bacon grease if you have some
1 rack pork baby back ribs, cut into individual ribs (I use whatever I find on sale)
Salt and pepper
1 medium onion, chopped
6 medium, white new potatoes, quartered
1 pound bag sauerkraut or two jars or cans (do not drain)
1/2 cup beef broth

Directions:
Directions:
In a dutch oven, sear ribs in oil or grease, take out and saute onion until soft, scraping bits the meat stuck to the pot. Add potatoes and ribs, cover with sauerkraut and pour broth over all. Cover and simmer for two or three hours until ribs are fork tender. If it gets too dry, add more broth or water.

I love this stuff. It's in my first cookbook but I left out the sauerkraut!! So, don't use that one, use this one.
