1 tablespoon extra virgin olive oil
1 large onion, minced
2 medium carrots, chopped
2 stalks celery, chopped
1 medium Yukon Gold Potato, peeled and chopped
1 medium zucchini, diced
3-4 sprigs parsley, minced
¼ teaspoon fresh rosemary and thyme
6 cups chicken or vegetable stock
2 cans white beans
1 tablespoon butter
Pepper, to taste

Heat a stockpot over medium-high heat. Add olive oil, onion, carrot, celery, and potato. Saute until the vegetables sweat. Stir in parsley, rosemary, and thyme. Then add zucchini, stock, and beans. Cook 25-30 minutes. Puree with an immersion blender to desired consistency. Stir in butter and season to taste with salt and pepper. Simmer an additional 3-5 minutes.
