5 tablespoons butter
6 cups cubed butternut squash
½ cup dark brown sugar
2 Granny Smith apples, chopped
5 cups water
1 cup apple cider
½ teaspoon salt
½ dried sage leaves
¼ teaspoon ground cloves
⅔ cup heavy cream
⅔ cup sour cream
⅛ teaspoon nutmeg

Melt butter in saucepan over medium heat. Sauté squash and brown sugar, stirring occasionally until slightly softened - about 15 minutes. Add apples, water, cider, salt, cinnamon, sage, and cloves; bring to boil Cover and simmer until apples are tender; 30 minutes. Cool soup and either puree in blender or use an immersion blender. Return soup to pan and stir in heavy cream. Divide among six bowls and garnish with sour cream and a dusting of nutmeg.
