2½ pounds fresh French beans, with stems snapped off
2 tablespoons butter
5 shallots, thinly sliced
2 teaspoons paprika
Cayenne pepper to taste
½ teaspoon pepper
½ teaspoon salt
8 ounces baby Portabella mushrooms, sliced
4 tablespoons flour
2 cups chicken stock
½ cup crème fraiche
1 tablespoon lemon juice
8 ounces of crispy French onions

Blanch beans in a large pot of salted boiling water, about five minutes. Drain beans and rinse with cold water and drain. Cut beans in half. Over medium heat, melt butter. Add shallots and sauté for approximately five minutes until translucent. Add paprika, cayenne pepper, ground pepper and salt, stir until combined. Stir in mushrooms, cover and cook for five minutes. Uncover and cook an additional five minutes, stirring occasionally. Gradually add flour to mushroom mixture, stir to combine. Gradually add chicken stock and stir until all stock has been incorporated and mixture is smooth. Bring sauce to simmer and cook an additional 5-8 minutes or until sauce has thickened. Once thickened, stir in crème fraiche, lemon juice, and French beans. Simmer about 8 minutes.
Preheat oven to 400ºF. Transfer mixture to a 9x13" glass baking dish. Bake for 20 minutes or until bubbling. Remove from oven and top with crispy onions. Broil for a few minutes to heat.
