Pasta Salad


Ingredients:

1 pound bow-tie (farfalle) pasta
1 bunch asparagus, spears cut into thirds lengthwise
1 pound feta cheese, crumbled
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
¼ cup thinly sliced oil pack, sundried tomatoes
¼ cup olive oil
¼ cup red-wine marinade
Salt

Cook pasta according to package directions and drain thoroughly. Add asparagus to separate pot of boiling water and cook 2 to 3 minutes or until asparagus is cooked to your liking. Drain thoroughly. Toss the pasta, asparagus, cheese, peppers, and sun-dried tomatoes in a bowl. Add olive oil, marinade, and salt and pepper to taste; mix well.
 

Red-Wine Marinade

2 cups sugar
½ cup red wine vinegar

Directions:
Directions:
Combine sugar and vinegar in a saucepan. Bring to a boil. Cook, stirring constantly, until the sugar dissolves, about 2 minutes. Remove from heat. Let stand until cool. Store in tightly covered contained. Keep refrigerated. Makes two cups and will keep for a couple of weeks.

Extra marinade may be used as a base for vinaigrette salad dressings by mixing it with olive oil and spices of your choice. Can also be used to marinate meat or roast potatoes.
