1 egg, separated
1 20 oz cannot pineapple rings
1 cup pineapple juice
1/3 cup butter, creamed
1 tsp vanilla
1/2 cup flour
2 tsp baking powder
red maraschino cherries
3 tbsp butter
1/2 cup brown sugar

Directions:
Directions:
Cream butter and sugar together; add beaten egg yolk, pineapple juice and vanilla.
Measure flour, baking powder, salt and add to creamed mixture. Fold in stiffly beaten egg whites.
Melt brown sugar and butter in 9 x 9 pan
Place pineapple rings to cover bottom of pan.
Date with red cherries
Pour cake mixture on top
Bake at 350 for 35 minutes
Turn upside down to serve and top with whip cream or ice cream
