1⅓ cups all purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 tablespoon sugar
2 eggs, separated
1¼ cups milk
3 tablespoons melted butter
1 cup chopped pecans
Optional ingredients: fresh blueberries or crumbled bacon

Directions:
Directions:
Combine flour, baking powder, salt, and sugar. Beat egg whites until stiff, moist peaks form. In a separate bowl beat yolks, milk and melted butter. Pour liquid all at once into dry ingredients; beat until smooth. Stir in pecans (or blueberries or bacon). Fold in beaten egg whites. Bake in waffle iron according to manufacturer's instructions.
