1 lb store bought pizza dough
1/4 c. EEOV
1 lb mixed mushrooms (sliced)
1/4 c. parsley (chopped)
1 t. kosher salt (divided)
3/4 t. fresh ground black pepper (divided)
1/2 c. whole milk ricotta
1 c. shredded mozzarella
1 clove garlic (finely chopped)

Preheat oven to 450º with rack in lowest position. On a baking sheet lined with parchment stretch out dough to a 16 x 10 rectangle. Bake until lightly golden (approx. 7 minutes).

Heat 2 T of olive oil in a large nonstick skillet. Add mushrooms and cook until golden brown (approx. 12 minutes). Remove from heat and stir in parsley and 1/2 t. of salt & pepper each.

Stir together mozzarella, garlic, remaining oil, salt & pepper. Spread over prefaced crust leaving approx 1" border. Arrange mushrooms onto. Bake until golden brown (approx. 12 minutes). Cut into slices and serve.
