2 cups of flour plus 1 scoop
1 cup Crisco
½ teaspoon salt
Approximately 6 tablespoons ice water

Cut flour, salt, and Crisco with pastry tool until there is a course meal. Add ice water 1 tablespoon at a time and stir until ball of dough starts to form. Divide dough into two equal sized balls and roll on lightly floured pastry cloth with floured wooden rolling pin.

For empty shell pie crust bake for 8-10 minutes at 450ºF until golden brown. Otherwise fill, top, and bake according to pie recipe.

Polly makes delicious pies with this crust recipe and has perfected the art of pie making. The family favorite is her chocolate pie. Jamie has a preference to substitute butter for the Crisco for a rich, buttery crust. It works best if the butter is almost frozen to start.
