1½ pounds ground beef
1 small onion, diced
1 cup white rice
1 teaspoon pepper
1 teaspoon salt
1 teaspoon smoke paprika
½ cup green or red pepper, diced
1 finely chopped jalapeño pepper
2 eggs
16 ounces of tomato sauce
16 ounces of diced fire roasted tomatoes

Directions:

Mix first 9 ingredients and roll the meat mixture into 2 inch meat balls. Place in large pot on top of stove and brown the meat bowls over medium heat. Add tomato sauce and diced tomatoes and simmer on low heat for 45 minutes.
