1 sweet onion, finely chopped
½ cup of fresh carrot, diced
3 tablespoons butter
1 cup long-grain white rice
2 cups of chicken or beef broth
Salt and Pepper
1 tablespoon fresh parsley, chopped (optional)

Directions:
Directions:
In a 2 quart pan over medium heat, cook onion and carrot in butter until slightly caramelized. Add rice and cook, stirring occasionally, until rice is golden (5-7 minutes). Add broth and salt and pepper to taste. Cover and bring to a boil; reduce heat and simmer until rice is al dente and all liquid is absorbed (20 to 25 minutes). Fluff with fork and either toss with parsley or garnish with parsley, if used. Alternatives include adding or substituting mushrooms for the carrot and/or substituting white rice for brown rice.
