Note: Refrigerate this cheesecake for a day prior to serving.


½ box Graham Wafers, crushed
About 6 Tbsp. butter, melted
2 lbs. cream cheese
1 cup white sugar
½ tsp. salt
1 tsp. vanilla
4 eggs, separated
2 Tbsp. flour

Cherry pie filling
Graham Cracker crumbs to sprinkle on top

Directions:

Preheat oven to 350º.

Melt butter, and add gradually to crushed Graham Crackers until it holds its shape.
Pat into the bottom and sides of a 9”x13” dish.

Beat cream cheese and sugar until smooth.
Mix in salt and vanilla.
Beat in egg yolks one at a time.
In a separate bowl, beat egg whites until they are stiff but not dry.
Fold into cream cheese mixture with a spatula.
Add flour and mix.

Pour the filling into the dish.
Sprinkle Graham Cracker crumbs on top.
Bake at 350º for 35 minutes.

When cool, spread on cherry pie filling.
Store in fridge for a day before serving.
