Day 1
4 cups water lukewarm
4 cups whole wheat flour
4 tbsp yeast
4 tbsp sugar

Day 2
6 cups luke warm water
4 cups white flour
4 cups whole wheat flour
4 tbsp salt
2 cups wheat germ
2 cups bran
2 cups 7 grain cereal
2 cups rolled oats

Directions:

Mix Day 1 ingredients; cover with plastic wrap; leave for a day (you'll need a big bowl because it will rise quite a bit)
The next day add Day 2 ingredients and mix well (knead, knead, knead!) Cover with plastic wrap and let rise overnight
On Day 3 punch dough down again and put in individual pans or put on a big pizza stone. Let rise again until about double
Bake at 450 for 1 hour and the reduce heat to 350 and bake another 1/2 hour (if you are using load pans this time can be reduced some)
