2 - 2 1/2 cups peeled and grated zucchini
3 tsp vanilla
1/2 cup chopped nuts
3 eggs
1 cup oil
2 cups sugar
3 cups flour
1 tsp salt
1 tsp baking soda
1 1/4 tsp baking powder
3 tsp cinnamon

Combine all ingredients
Bake in two loaf pans at 350 for 1 hour
