Parchment Paper
1 - 6 oz. fish (cod, halibut, haddock)
1 T. olive oil
salt, pepper
1 bay leaf
fresh herbs (chives, parsley, tarragon)
green onions - ends trimmed
1 T. unsalted butter
3 lemon slices
1 T. white wine

This is for a single serving. Increase amounts
for as many as you are making.

Directions:
Directions:
Preheat oven to 400º F.
Cut a piece of parchment paper - about 14 x 11 inches.
Place fish in the center, drizzle with olive oil all over and
salt and pepper to taste.
Lay bay leaf, herbs, and green onion on top of fish.
Break butter into little pieces and place on top of herbs.
Place lemon slices over everything. Drizzle with remaining oil.
Pour the wine over the fish.
Fold the parchment and crimp the edges.
Place the fish on a baking sheet and bake for 10 min.
Remove from oven and transfer to a dinner plate.
Serve immediately.

This meal can be prepped up to six hours ahead and
refrigerated. Then cook as directed.

Variation:
If you desire a "Mediterranean" style fish in a bag,
add oregano, red peppers, Kalamata olives, and
gorganzola cheese.
