Poppy Seed Cake

1/2 c. poppy seeds
1 c. milk
3/4 c. margarine or butter, softened
1 1/2 c. sugar
2 c. flour
2 tsp. baking powder
4 egg whites (beaten until soft peaks form)
1 tsp. vanilla

Directions:
Directions:
Soak poppy seeds in milk overnight in refrigerator. In a large mixing bowl beat together sugar and butter. Mix in milk and poppy seeds. Add vanilla. Add dry ingredients and mix well. Gently fold in beaten egg whites. Grease and flour two 9 inch round cake pans. Pour cake batter into pans evenly. Bake for approximately 25 minutes at 350º. Cool cakes on a rack for 10 minutes. Remove from pans and cool until room temperature. Ice with Ornamental Icing.

2 1/2 c. powdered sugar
2 egg whites
1 tsp. almond extract
1/2 tsp. cream of tartar

Mix together until smooth. Beat with electric mixer on whip until stiff peaks form. Ice cake.
