2 cups of flour
1 cup of butter
2 tsp baking powder
1 egg
1 tbsp milk
1 cup of raspberry jam
2 cups of coconut
1 cup of sugar
1 egg
1 tsp vanilla
1 tbsp melted butter

Directions:
Directions:
Mix first 3 ingredients as for pastry; add egg and milk and pat into 9 x12 pan
Spread jam over the base
Beat remaining egg and add coconut, sugar vanilla and melted butter; sprinkle on top of the jam
Bake at 350 for 25 minutes
Cut into squares when cool
