½ cup WaterMaid Rice,
medium grain
2 eggs, beaten
½ cup sugar
3 cups Whole milk, divided
Pinch of salt
1 teaspoon vanilla
Cinnamon

Directions:
Directions:
Cook rice according to package directions. Add 2 cups milk to cooked rice. Bring to a boil. Mix together eggs, sugar, 1 cup milk and a pinch of salt. Add egg mixture to rice. Bring to a boil, stirring constantly. Boil for 1-2 minutes. Add the vanilla. Pour into a dish to cool. Sprinkle cinnamon on top. Cover with cling wrap to keep the pudding from forming a skin on top.
