1 Tablespoon olive oil
6 garlic cloves, minced
1/4 teaspoon red pepper flakes
28 oz. crushed tomatoes
3 cups water
12 oz. ziti
1/2 cup 1/2 & 1/2
1/2 cup Parmesan cheese
1/4 cup fresh basil
1 cup shredded mozzarella cheese

Heat oven to 475º, rack to the middle

Simmer ziti, combine oil, garlic, pepper & salt in 12" skillet. Saute over medium heat until fragrant. Add crushed tomatoes, water, ziti & 1/4 teaspoon salt. Cover & cook, stirring often & adjusting heat as needed to maintain vigorous simmer, until zitia is almost tender. 15 - 18 minutes.

Add cheese & bake. Stir in 1/2 & 1/2, Parmesan & basil. Season with salt & pepper to taste. Sprinkle mozzarella evenly over ziti. Transfer skillet to oven & bake till cheese has melted & browned.
