4 cups low sodium chicken broth
14 oz can white hominy (rinsed)
Salt & pepper to taste
1 1/2 lbs. boneless chicken, Cooked & shredded
2 Tablespoons vegetable oil
1 onion peeled & chopped into large chunks
3 Anaheim chilies, cored & cut into large chunks
1 jalapeno chili, seeded & cut into rough pieces
3 garlic cloves, peeled
2 teaspoons ground cumin
2 teaspoons flour
2 teaspoons fresh lime juice
2 Tablespoons minced fresh cilantro

Directions:
Directions:
Bring broth, hominy & salt to boil, covered in a large saucepan. Pulse onion, chilies, jalepeno & garlic in food processor (10 pulses). Add vegetables to broth mixture, stir in cumin. Cook till fragrant. Stir in flour & cook till lightly browned ( 1 minute). Reduce heat to low, cover & cook till well mixed & done. Mix in remaining ingredients. Simmer for 15 minutes, enjoy!
