2 bunches finely chopped green onions
2 1/2 cups quick grits
2 cups grated cheese
1/2 teaspoon cayenne pepper
2 teaspoons salt
1 1/2 teaspoons pepper
12 medium shrimp, cooked, peeled, halved
1/2 cup flour
1/2 cup cornmeal
2 Tablespoons butter
Jalapeno jelly

Directions:

Butter 13" x 18" baking pan with sides.

Bring 6 cups water to boil, slowly sprinkle in grits, stirring constantly. Reduce heat to medium & stir till thick.

Remove from heat & stir in cheese, spices & onions.

Spoon mixture into baking dish, about 1/2" thick. Use a glass to cut into circles, press a shrimp into middle of each circle.

Combine flour & cornmeal in pie pan. Coat circles. Fry in butter/oil, approximately 2 minutes per side. Drain on paper towels. Serve with jalapeno jelly.
