1 lb bologna
1 c mayonnaise (to taste, consistency desired)
4 eggs
¼ c of sweet relish
⅓ c celery, minced
⅛ c onion, minced

Directions:
Directions:
Grind the bologna,eggs, and celery in a food grinder into a large bowl. Add the relish and mayonnaise. Stir until well blended. Spread a thick layer on a slice of bread and top with another slice. Stores in refrigerator up to one week if you can keep it that long.

Note: Not everyone has meat grinders these days so I modified the recipe to accommodate those with food processors....
(Add the celery to a food processor, mince further a bit. Add the relish,and eggs and pulse a couple of times, just to mix. Cut up your bologna roughly into like 1 inch pieces. Add and pulse until fairly small. Add the mayo and pulse a few times to mix. You don’t want the mix to be mush, you should still be able to pick out pieces of the ingredients.)

You can substitute chicken, ham or tuna for the meat for a different taste. Sometimes I also add 2 Tbsp mustard, 2 Tbsp sugar, along with ½ c yellow onion for something a little different.
