10 Eggs, separated
1 c. Sugar
¾ c. Potato Starch
1 tsp. Baking Powder
1 pkg. Vanilla Pudding Mix
½ c. Oil

Directions:
Directions:
1. Preheat oven to 350º.
2. Beat egg whites with half cup sugar in one bowl.
3. Beat yolks with half cup sugar in a different bowl.
4. Add oil, potato starch, baking powder and pudding to yolk mixture.
5. Fold into whites.
6. Bake for 1 hour. IF baking in 9 inch round pans, bake for 30 minutes.

Variations: You can shred chocolate on top of the cake before baking. You can use it as a base for Strawberry Shortcake (best on Pesach). Tastes great plain too!
