1 lb bulk Italian sausage
1 large onion, chopped
1 (10 oz) pkg frozen chopped spinach; cooked and well drained
1 (8 oz) pkg cream cheese; softened
1 egg beated
2 cups (8 oz) shredded mozzarella cheese; divided
2 cups (8 oz) shredded cheddar cheese
1 cup cottage cheese
¼ cup grated Parmesan cheese
¼ tsp each salt and pepper
25 jumbo shell noodles, cooked & drained

Sauce:
1 jar (24 oz) 3 cheese spaghetti sauce
1 Tbsp dried minced onion
2 gloves garlic minced
1 tsp each sugar and dried oregano
½ tsp salt
¼ tsp pepper

Directions:
Directions:
In a skillet, cook sausage and onion until meat is no longer pink; drain. Transfer to large bowl. Stir in spinach, cream cheese and egg. Add 1 cup mozzarella, cheddar, cottage cheese, Parmesan & seasonings; mix well.

Stuff shells and arrange in a greased 9x13 baking dish. Combine sauce ingredients. Spoon over shells. Cover and bake at 350º for 40 minutes. Uncover; sprinkle with remaining mozzarella. Return to oven for 5 minutes or until cheese melts.
