Ingredients: 1 c. Spinach Dip Mix (Recipe below - freeze the unused portion for future use) 1 c. shredded Cheddar cheese 1 c. shredded Mozzarella cheese 1 c. sour cream 1 c. bacon bits 1 c. red onion, diced fine 16 oz. salsa picante
SPINACH DIP MIX: (Makes 3 - 4 Cups) 1½ T unsalted butter 3 T. all-purpose flour 2 c. half and half 1/2 c. grated Parmesan cheese 1½ t. kosher salt 1 T. hot pepper sauce 16 oz. pkg. frozen chopped spinach

Directions:Preheat oven to 350º. Into an oven-proof dish, place the spinach dip, Cheddar cheese and Mozzarella cheese. Heat in the oven for about 10 minutes. Stir thoroughly and place back in the oven for 5 minutes. Remove from the oven and set in the center of a large heatproof serving platter. Spoon a dollop of sour cream onto the center of the dip, with the onions on one side and the bacon bits on the other. Serve with salsa in a small serving dish on the side with chips or your favorite crackers.
SPINACH DIP MIX: Defrost the spinach in a colander in the sink. When defrosted, place spinach in a clean dish towel and squeeze until dry. Set aside. Melt butter in a large frying pan. Slowly whisk in flour and cook briefly to form a roux. Add the half and half and cook until it thickens. Turn off the heat and mix in the cheese, salt and hot pepper sauce. Set aside to cool. Add the dry spinach to the cooled cream sauce and mix thoroughly. |
