2 whole chickens, about 3 lb. each, cut up
1 stick butter
6 carrots, cut into pieces
6 thinly sliced garlic cloves
4 celery stalks, cut into pieces
2 med. onions, chopped
2 leeks, white part only chopped
1 tbsp.poultry seasoning
1/2 c. flour

Dumplings:
2 1/2 c. flour
3/4 c. milk, more if necessary
2 tbsp. butter
1 tbsp. baking powder
1 tsp. salt
2 large eggs
1/4 c. chopped parsley

Soup: Place chicken pieces in large pot Cover with water. Bring to a boil and then reduce heat to a slow simmer and cook for about 25 minutes until chicken is cooked.

Remove chicken from pot and cool. Remove meat from the bone and cut into pieces. Strain the chicken broth snf krrp estm

In another pot, melt the butter and stir in carrots, celery, garlic, leeks, onion snf poultry seasoning. Cook until vegetables begin to soften. 8 to 10 minutes. Stir in the flour. Add chicken broth Bring to boil and then reduce to a simmer. Cook until soup thickens slightly and vegetables soften. Add cooked chicken and continue to simmer.

Dumplings:
Medium bowl add flour. Use 2 knoves to cut in milk, butter, baking powder, salt and eggs. Add additional milk, 1 tbsp. at a time if necessary. Dough should be moist but not too wet. In 1/4 cup pieces, place dumplings directly into simmering soup. Cover and cook 10 to 12 minutes. Sprinkle parsley on top and serve.
