1 med. head cauliflower
7 to 8 roasted garlic cloves, mashed
1/2 c. water reserved from cooking cauliflower or 1/2 c. broth
1/2 c. grated parmesan cheese
salt and pepper to taste

Directions:
Directions:
Cut cauliflower into florests. Cook in water until tender.
Cool. Put all ingredients except parmesan cheese into blender and blend until smooth. If too thick, add more water or broth. Add parmesan cheese/ Use over cooked vegetables or pasta. Can be stored in refrigerator until ready to use.
