1 small can pimientos
1 cup rice, (long cooking)
1 cup grated cheese
2 eggs
1/2 cup milk
Salt and pepper

Directions:
Directions:
Wash rice, cook 15 to 20 minutes in 6 to 8 cups of boiling salted water. Drain, add cheese, finely chopped pimientos, beaten eggs, milk and seasonings. Pour into buttered casserole and bake on 350º for 20 minutes.
