1 eggplant, peeled and cubed
1 can mushroom soup
2 eggs
1 t. sugar
1/2 c. chopped onion
1 c. grated cheese
1 c. cracker crumbs
1/2 stick oleo, melted

Directions:
Directions:
Cook eggplant in salted water (3 or 4 minutes) until tender. Drain, add mushroom soup, eggs, sugar, onion, and cheese to eggplant. Add 1/2 cup crumbs. Put in casserole. Pour melted oleo on top. Sprinkle with other half-cup crumbs. Bake 30 minutes at 350º. One pound squash may be used in place of eggplant.
