½ small red onion, diced
1-2 tomatoes, whole or cherry, diced or halved
olive oil
red wine vinegar
salt

Directions:
Directions:
Place vegetables in a salad bowl.
Drizzle with olive oil and a bit of
red wine vinegar.
Salt to taste, then toss lightly.
