8 boiled potatoes (@ 2 1/2 lb.)
1 stalk celery
2 hard boiled eggs,sliced
1 minced onion
1 T. parsley
2 eggs, beaten
1 c. sugar
1/2 c. vinegar
1/2 c. water
1/2 tsp. salt
1/4 tsp. pepper
4 slices bacon

Directions:

Boil potatoes in jacket. Peel potatoes and dice. Add celery, sliced eggs and onion. Fry bacon till brown. Combine beaten raw eggs with sugar. Add spices,water and vinegar. Mix well. Add to bacon and fat in pan. Stir till mixture thickens. ( about 10 min.) Pour over potato mixture and stir lightly, as not to break up potatoes. Let stand to cool and then refrigerate.

When I think of Potato Salad this comes to mind. It was always served at my house as it was my Dad's favorite. The dressing is close to the same we used for Hot Bacon Dressing, also a favorite growing up.
