Ingredients: 2 pounds Ground Beef 1 Onion (diced) 1 or 2 Green Onions (chopped) * optional (I usually only add these if I already have them) 1 Egg 1 cup Bread Crumbs (I use Panko) ½ cup Tomato Sauce or Ketchup (I use ketchup) 1 teaspoon Salt 1 teaspoon Pepper 1 Garlic Clove ½ teaspoon Thyme 1 teaspoon Basil 2 teaspoons Worchestershire Sauce
Sauce:
½ cup Tomato Sauce or Ketchup 2 tablespoons Mustard (yellow) 2 tablespoons White Vinegar 2 tablespoons Brown Sugar

Directions:The Meatloaf: 1. Cook the onion and garlic in a frying pan for 5 to 10 minutes 2. Mix all ingredients together for the meatloaf in a large bowl (including the cooked onion and garlic) 3. Press the beef mixture into a greased loaf pan. Make sure to make a well around the edge of the meatloaf for the grease to sit in or it will go over the edge of your pan. (I usually put a cookie sheet on the rack below my meatloaf to catch any drips.) 4. Cook in a 450 degree oven for 15 minutes then remove from the oven and add the sauce
The Sauce: 1. Mix all the ingredients together for the sauce 2. Pour over the top of the meatloaf – you’ll want to cover the whole top* 3. Once the sauce is added cook in a 350 degree oven for 1 hour and 15 minutes
* The original recipe calls for you to pour 2/3 of the sauce over the top of the meatloaf and use the remainder to baste with every 15 minutes. I found that it didn’t make a difference if you poured the whole amount on the top (or as much as you can fit) or kept back some to baste the meatloaf. |
