1 T. olive oil
2 cups chopped onions
3 cloves garlic, minced
1 green pepper, diced
1 T. Herb de Provence
2 tsp. salt
1 tsp. pepper
1 T. Italian seasoning
3 T. Worcestershire Sauce
⅓ cup chicken broth
1 T. tomato paste
¼ cup salsa
2 lbs. ground chuck
2 lbs. ground beef
1 1/2 cups dry bread crumbs
3 large eggs, beaten
1 can tomato soup

Directions:
Directions:
Preheat oven to 350º F.
Saute the onions, garlic, herbs for 8 min.
Remove from heat and add the Worcestershire
sauce, chicken stock, and tomato paste. Allow
to cool slightly.

In a large bowl, combine the meat, onion mixture,
bread crumbs, eggs and salsa and mix lightly with a fork.
DO NOT MASH or meatloaf will be dense.
Shape into a loaf and place on a sheet pan lined
with parchment paper.
Spread the tomato soup on top.
Bake for an hour.
