2 T. olive oil
3 cloves garlic, diced
2 cups onions, chopped
1 red pepper, chopped
1 large can diced tomatoes
1 small-med cabbage, chopped up in small pieces
2 cups carrots, chopped
10 green beans, ends cut off
1 small can tomato sauce w/jalapeno
1 1/2 tsp. each of salt and pepper
6 cups water
1 box of vegetable broth
fresh herbs
Optional: add lentils or chicken

Directions:
Directions:
Saute garlic, pepper, onions and carrots in olive oil.
Add in any fresh herbs - diced.
Add rest of the ingredients in the large pot and
cook soup until veggies are tender.
