You can make one cake in a cheesecake pan, or 2 pies using prepared graham cracker pie crusts. If making 1 cake in a spring form cheesecake pan, the recipe is below. If using prepared pie crusts, go right to the cake/pie layer 1 & 2. You will probably have some extra, I bake in a small glass dish with the rest. Take out the extra when brown.

Crust
1½ cups graham cracker crumbs
¼ cup butter softened

Cake/Pie Layer 1
3 (8oz.) pk. cream cheese
¾ cup sugar
3 eggs
1 tsp. lemon juice, fresh is best
1 tsp. vanilla

Cake/Pie Layer 2
1 pt (2 cups) sour cream
¾ cup sugar
1 tsp. vanilla
pinch salt

Directions:

Preheat oven at 325º. Spray a cheesecake pan, bottom and sides.
Mix the graham cracker crumbs and softened butter and put in the bottom of the cheesecake pan. Mix till smooth and fluffy, the cream cheese, sugar, eggs, lemon juice and vanilla. Pour into cake pan. Bake for 45 minutes at 325º then cool. Mix the 2nd layer. Pour on top of the cooled first layer and bake for 15 minutes at 325º, cool and refrigerate for at least 6 hours. Top with your favorite topping, cherry or strawberry pie filling, or homemade jam.
